- Sprouted Lentil Salsa

Sprouted Lentil Salsa
1 cup sprouted organic lentils
2 large organic tomatoes
1 bunch cilantro
juice of 2 lemons or limes
1/2 small red onion
Seasoning - sea salt or whatever you like
Put Cilantro and juice in food processor and blend,
and also add the sprouted lentils at this time.
so that the cilantro gets chopped finely. Or chop with
knife and then add to bowl with juice.
Chop the tomato and onion in pieces to put into the
food processor. Pulse with the blade, or dice with
a chefs knife, add to cilantro and juice. Add
seasonings.
It is also good with a 1/2 chopped mango or a little
shredded fresh basil- just one leaf is enough.
Keeps a week, has protein, and is good with salad,
roll ups, nori sheets, crackers, or as a side dish.
